Roasting fresh vegetables is what first got me really interested in what you can do with food. Here is my take on where you can go with simple food!

Bruschetta
The Stuff:
medium red onion, diced
1 tsp sugar
olive oil
kosher salt
balsamic vinegar
cracked black pepper
3-5 roasted red peppers, diced
2-3 ripe plum tomatoes, seeded and diced
4-5 leaves of basil, chopped
nice and crusty baguette, sliced into rounds
block of Parmesan cheese
In a sauté pan over low heat cook the red onion with 1 tbsp olive oil, sugar, salt and pepper (to taste) until browned 10-15 minutes. Remove from heat and stir in peppers, tomato, basil and 3 tbsp balsamic vinegar.
Brush the bread rounds with olive oil and broil in the oven until golden brown, top with veggie mix and grate cheese over the top. Serve and enjoy!!
