Bruled Berries with Mascarpone Creme



The Tools:

4 small gratin dishes
brulee torch w/cartridge (or your brolier)
blender


The Stuff:
2 tsp turbinado sugar (raw sugar)
angel food cake (yes, I buy the store bought ones, I know...)
raspberries & blackberries (organic if you can find them)
4 oz. mascarpone cheese
1 tsp vanilla extract
4 tsp super fine sugar (if you don't have it, take regular sugar and buzz it in the blender until it's very powdery)
1/4 cup heavy cream


For the mascarpone creme:

In a blender mix the mascarpone, vanilla extract, super fine sugar and heavy cream until it seizes until a think creme.

For the rest:

Cut the angel food cake into 1/4 inch slices and place into the bottom on the gratin dish, piecing together in a single layer on the bottom of the dish (about 3 small slices).  Spread the mascarpone creme over the cake in a think layer so that it is equal with the top of the dish.  Slice berries in half and layer in a circle over the top of the creme in a pretty way.  Sprinkle berries with 1/2 tsp of the turbinado sugar and torch until sugar caramelizes or broil on high 30 seconds until the sugar bubbles.


Serve and enjoy!!
